(More customer reviews)This is a melt in your mouth chocolate with a good snap and a nice amount of creaminess. Instead of using vanilla extract, they use vanilla beans to accent the creamy flavor of the milk chocolate.
In baking, the wafers melt spread some, which creates layers of chocolate instead of little chocolate bits.
Couveture chocolate has a higher amount of cocoa butter in it than regular chocolate. Since cocoa butter is fairly hard at room temperature but melts at body temperature, the result is a smooth melting chocolate that works very well for dipping strawberries and using for molding. This is a better, more true chocolate flavor then chocolate wafers that use vegetable oil to help the melting process, but it is a bit touchier. Use a double boiler and don't let a drop of water get into the melted chocolate.
This works well as a snacking chocolate or a mix in for trail mixes because it's larger than chips although not as large as Brach's Solid Milk Chocolate Stars. About 3/4 inch in diameter and fairly thin.
