This is a totally delicious cheese. It reminds one of Swiss cheese, (after all, the name of the cheese is SWITZERLAND RAW-MILK RACHETTE -- 8 OZ.) It is slightly firmer than most Swiss cheese, and has a (very), slighly stronger Swiss-cheese flavour. It is totally wonderful to eat, and is very, very tasty indeed. It has NO holes in it like regular Swiss cheese and although I have read that the bigger the holes are in a Swiss cheese, the better, I think there must be a different set of rules for gourmet cheeses like this one. At least you are NOT paying money for the locked-in air-pockets that holes in regular Swiss cheese produce. So, every penny you spend on this delightful cheese, is spent ONLY on the cheese itself! It has only 70 calories per ounce, as compared to another cheese I bought at the same time from I-gourmet, which is FONTINA VAL D'AOSTA. Both cheeses are scrumptious --but since Swiss Cheese has ALWAYS been my favourite, I guess I sort of favour this Switzerland Raw-milk Rachette cheese, (especially since it is also 30 calories less per ounce) -- but I wouldn't have given up sampling the Fontina Val D'Aosta for the world. It comes in, a VERY close second. (Make that a 1.000001 second!)
This totally scrumptious, swiss-like cheese, (as well as the yummy Val D'Aosta cheese -- for which I have also written a review), and myriads of other imported cheeses, may soon actually become ILLEGAL in the USA, if busy-body fuss-budget bureaucrats within the F.D.A. have their way over saner people working at the same agency. Does this cheese, (and others like it), make people dependant on it? No -- it's delicious, but not really habit-forming. Can it accept hidden messages in secret, invisible ink? No -- no more than other foods of the same consistancy. How about hiding stolen gems? Again -- this nefarius act can be accomplished in just about any food. So why is SWITZERLAND RAW-MILK RACHETTE cheese, FONTINA VAL D'AOSTIA cheese, and so many other fine, imported cheeses, on the "endangered species" list, (at least, within the USA) -- and not, say, Velveeta cheese, USA-made yogurt, or even cantalope? (it's easy to hide hidden gems in cantalope!) The reason is that this cheese, (and so many other delicious gourmet cheeses) is..........(gasp!).................(gasp! gasp!)..................(gasp! gasp! gasp! gasp! gasp!)...................UNpasteurized! Oh, my goodness! The "horrible" things UNpasteuized cheese will do...every single time it is eaten! At least, think of the "horrible" things it will do to AMERICANS! For in France, (where Louis Pasteur was born, and did his work)....UNpasteurized cheese can be made and eaten, without fear of long, (or even short), prison sentences. Unpasteurized cheese has NOT killed many, (or perhaps, ANY) people in recent times, in France, or in the many other countries where unpasteurized cheese is allowed to be freely made, bought, and enjoyed by citizens and tourists alike! It's almost like the "Sweet N Low" packet I found whilst visiting relatives in Canada. This innocent-looking, familiar pink packet contained ----- CYCLAMATES!
Cyclamates have long been banned in the USA, (also by aformentioned 'microbe-hunters' at our most beloved F.D.A.) --but it is still legal in Canada, and has NOT killed any Canadians, by latest count. Strange, how these chemicals (ARE SUPPOSED TO) pick their victims from their nationalities. Cyclamates, (and unpastuerized cheeses) kill Americans, but not Canadians, French people, Italians, or the Swiss? This might be a good idea for a novel -- but in reality -- NO! Everyone is a human being -- homo sapien -- and if raw-milk cheese will not kill Canadians, Swiss people, Italians, or other Europeans, most assuredly, it is totally safe for Ameicans, (and HAS been, for a very long time, up until the rumoured ban could take effect, if cooler heads at the FDA don't prevail.)
It's only cheese, true. But one non-sensical law can easily lead to others! By passing such laws, our "august" leaders show their power. They forget they are only representatives of US, the people. They are civil SERVANTS. Or, in the words of Will Rogers, "our hired help"!
Remember the "Pillow Police"? They were a fantasy, but SO many people were afraid to remove those tags that came with every pillow, because of the wording on the tags. "Illegal to remove this tag". It is only very recently that the "Pillow Police" were shown to be an illsion, and the words, ".....Except By The Consumer", were added. But with such brazen abuse of power, as the ultimate banning of Unpasteurized cheese and milk, by the so called "do-gooders" at the FDA, who knows when the "Pillow Police" COULD actually come back -- for real? Not to mention suspicion being cast on every single person who dares to go to the supermarket to buy some cantalope!
