It has the dense texture of a gouda, but creamier and more velvety with a slight graininess of aged cheeses. At room temperature all the flavors and texture are at their peak. Though a goat cheese, it does not taste at all like goat milk. In the mouth its flavor is creamy, slightly sweet/salty/tangy, with a complex indescribable earthy flavors reminiscent of nuts, and browned butter. You will not be disappointed if you buy this cheese. It is our favorite, and we are dedicated cheeseheads. If you are lactose intolerant, this will become your favorite cheese. I cannot say enough good things about this cheese.
